JT's Whole Wheat–Oat Pancakes Recipe

Whole grain, whole wheat flour & oats make this recipe flavour & fibre-filled whilst being diabetic friendly to boot. Only 287 calories per serving!

INGREDIENTS
  • 1.25 cup unbleached whole-wheat flour
  • .25 cup old-fashioned oats
  • 1.5 teaspoons baking soda
  • 1 teaspoon kosher salt
  • 1 cup 1% milk
  • 1/2 cup rice bran oil
  • 1 large egg
  • 2 tablespoons distilled white vinegar
INSTRUCTIONS
  1. Mix together flour, oats, baking soda & salt until evenly combined; set aside.
  2. Whisk together milk, oil, egg & vinegar.
  3. Make a well in the flour mixture and add the milk mixture.
    Stir until just moistened.
    Rest batter, but only long enough to allow griddle to heat.
  4. Heat a cast iron pan over medium heat. (Test for ready w/water.)
    Lubricate pan with some additional oil.
  5. Ladle batter onto heated pan. (½C for 6" or ¼C for 4" cakes.)
    Cook until bubbles pop & holes remain – do not over-cook/burn!
    Flip and cook on the other side to desired brownness.
    Serve immediately with your favourite condiments.
