Whole Wheat–Oat Pancakes
Whole grain, whole wheat flour & oats make this recipe flavour & fibre-filled whilst being diabetic friendly to boot. Only 287 calories per serving!
INGREDIENTS
- 1.25 cup unbleached whole-wheat flour
- .25 cup old-fashioned oats
- 1.5 teaspoons baking soda
- 1 teaspoon kosher salt
- 1 cup 1% milk
- 1/2 cup rice bran oil
- 1 large egg
- 2 tablespoons distilled white vinegar
INSTRUCTIONS
- Mix together flour, oats, baking soda & salt until evenly combined; set aside.
- Whisk together milk, oil, egg & vinegar.
- Make a well in the flour mixture and add the milk mixture.
Stir until just moistened.
Rest batter, but only long enough to allow griddle to heat. - Heat a cast iron pan over medium heat. (Test for ready w/water.)
Lubricate pan with some additional oil. - Ladle batter onto heated pan. (½C for 6" or ¼C for 4" cakes.)
Cook until bubbles pop & holes remain – do not over-cook/burn!
Flip and cook on the other side to desired brownness.
Serve immediately with your favourite condiments.
