Roasted Fingerling Potatoes
We like to eat the fingerling potatoes in the spring with Schnitzel and white asparagus.
INGREDIENTS
- 1 1/4 to 1 1/2 pounds fingerling potatoes, scrubbed
- 2 tablespoons butter (unsalted)
- kosher salt and freshly ground pepper to taste
- 1/2 teaspoon sugar
- juice of one lemon
- 2 - 3 tablespoons of chopped parsley
INSTRUCTIONS
- Boil the potatoes until tender.
- Heat butter in a skillet on medium heat, add the potatoes, salt and pepper. Let the potatoes brown while stirring now and then, then add the sugar.
- Stir and add the lemon juice and the parsley.
