Fingerling Potatoes Recipe

We like to eat the fingerling potatoes in the spring with Schnitzel and white asparagus.

INGREDIENTS
  • 1 1/4 to 1 1/2 pounds fingerling potatoes, scrubbed
  • 2 tablespoons butter (unsalted)
  • kosher salt and freshly ground pepper to taste
  • 1/2 teaspoon sugar
  • juice of one lemon
  • 2 - 3 tablespoons of chopped parsley
INSTRUCTIONS
  1. Boil the potatoes until tender.
  2. Heat butter in a skillet on medium heat, add the potatoes, salt and pepper. Let the potatoes brown while stirring now and then, then add the sugar.
  3. Stir and add the lemon juice and the parsley.
