Cajun Dirty Rice Recipe

Rice Dressing aka Dirty Rice
Main Dish, Appetizer, or Side Dish
Also known as “Louisiana Dirty Rice”, this Renae’s version.

INGREDIENTS
  • 1 pound lean ground meat, browned
  • 1 cup raw rice
  • 1/2 cup each chopped celery, onion, bell pepper
  • 1 can blackeyed peas, undrained.
  • 3 cloves garlic, minced
  • 1 diced carrot
  • 1 tablespoon red pepper flakes
  • 1 teaspoon whole mustard seed
  • 1/2 teaspoon each ground cumin, ground cardamom and ground turmeric
  • 1 tablespoon fresh grated ginger
  • 2 cups beef stock If you're using ground pork, chicken or turkey, use chicken stock rather than beef stock.
  • 1 tablespoon cooking oil
INSTRUCTIONS
  1. Heat oil in fry pan on high heat til it shimmers, add the rice, stirring the rice in the hot oil until it’s a solid white and smells nutty.
  2. Add the celery, onion, bell pepper, and carrot, mustard seed, cumin, cardamom, turmeric, pepper flakes, and ginger. Saute for 3 minutes.
  3. Add the lean ground meat and brown it for about 10 minutes. If you are not using lean ground meat brown it in a separate pan and drain off the fat, please. Then add the meat to the rice, deglaze the pan you browned the meat in, with the stock, and add it back to the rice also. It’s just way easier to use lean ground meat.
  4. Finally, add the blackeyed peas and the stock.
  5. Turn the heat down to medium low, put a lid on it, and let it simmer 20 minutes, remove from heat and let rest for 5 minutes.

  • I agree that it needs livers and giblets... I was thinking she was making it 'cajun' as opposed to 'southern' or 'creole'... sometimes their take is a little more refined and less country/use-what-you-got-around style. I also use parsley and green onions... in fact... mines not much like this one at all... although, I don't think I've ever seen it with ground meat in it.

  • you would get slapped in the south for serving dirty rice without giblets

  • dirty rice is made with giblets, not ground meat!

  • sounds really tasty
