Spicy Creole with Soyrizo & Shrimp Recipe
A great recipe originally, I tweaked it because I don’t eat sausage. Instead of Aduille Sausage or Chorizo I used Soyrizo (it’s soy with chorizo seasonings I find it at Randall’s/Safeway with the soy cheese & tofu stuff), even my meat loving husband says it’s a good substitute! With rice it makes 4 good sized portions. Warning: This is spicy!
You can easily make this vegetarian by removing the shrimp or substituting it with Tofu. I’d love to hear how it turns out!
- 2 tbls. vegetable oil
- 2 celery stalks chopped
- 1 med. onion chopped
- 1 green bell pepper chopped
- 5 garlic cloves chopped
- 1 bay leave
- 1 jalapeno pepper
- 2 habenero peppers minced
- 1/4 T. Cajun seasoning
- 1/2 T. cayenne pepper powder
- 1/2 T. red pepper flakes
- 1/2 T. ground black pepper
- 1 t. cumin
- 1/2 T. Tabasco sauce
- 2 14 oz. cans of tomatoes
- 1/2 can of tomato paste, 1/2 cup water
- 1 lbs. uncooked shrimp shelled, deveined
- 1 lb. Soyrizo
- 1 salt to taste (2 tsp)
- Heat oil in large skillet or pot. Add onion, celery, green pepper, fresh jalepeno pepper, habenero pepper and garlic and saute until onion is translucent, about 5 minutes.
- In a blender, slightly pulse tomatoes, tomato paste, then slowly whisk into the skillet.
- Add bay leaves, red pepper flakes, cayenne pepper powder, black pepper, cumin, Tabasco sauce and Cajun seasoning. Return Soyrizo to the mixture.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- Add shrimp and cook for 1 minute, then remove and let stand covered for 5 min. Serve immediately with steamed rice.
