Microwave Brownie in a Mug (single serving) Recipe

This was a quick and easy brownie recipe to start with (thus a great chocolate fix) but I found it a little heavy. I reduced the sugar and flour a bit. So far I’ve made it for all the chocolate lovers I know and they’ve adored it—mostly because it’s so fast and most people have all the ingredients all the time.

Serving suggestion: with vanilla ice cream or chilled cream. Keep topping up with cream as you get to the bottom. I haven’t tried it with chocolate or caramel sauce and nuts but they may be good. Sometimes when I’m really full, I share it with a loved one.

INGREDIENTS
  • 2 Tbs vegetable oil
  • 2 Tbs water
  • Few drops vanilla extract
  • A dash salt
  • A pinch instant coffee powder (optional)
  • 3 Tbs granulated sugar
  • 2 Tbs unsweetened cocoa powder
  • 2 Tbs all purpose flour
INSTRUCTIONS
  1. In a 12 oz coffee mug, mix water, oil, salt, vanilla and coffee, if using. Whisk well.
  2. Add cocoa powder, whisk well. Add sugar, whisk well. Add flour, whisk well.
  3. Microwave for 60-75 seconds: 60 seconds for a molten bottom, 75 for uniformly done. I normally choose 60.
  4. Enjoy with a spoon and a scoop of vanilla ice cream. Careful, brownie will be hot.

    So yummy and too convenient! :) My variations to the original: a tablespoon of peanut butter chips, (awesome) OR a dash of mint extract and a tablespoon of white chocolate chips (my FAV!). A must try! Be warned: once you try these it will be IMPOSSIBLE to stop! :)

  • I just did this. So easy. Perfect for a quick brownie fix. Too easy actually. I put in 2 Tbsp of sugar and felt like it was sweet enough for me.

  • I was in a pinch tonight so I mixed about a quarter cup of chocolate chips, 2 tbs coconut milk, a tablespoon of flour, a tbs of sugar. Microwave for 30 seconds. Stir together. Add a splash of vanilla extract, half of an egg, microwave for a minute more, let cool and enjoy!

  • By the way, I've found that this brownie is much better with dark cocoa powder rather than normal unsweetened. I have a sweet tooth though, so others might find it too sweet. I think it is fantastic!

  • Okay, this brownie has become a problem for me.

    It is just way to easy to make, and tastes awfully good. I'm having trouble stopping myself from making it whenever I feel like it. Most desserts I just keep out of the house or tell myself they are too time-consuming, but neither works for this thing! =P

  • we just did these to break up a boring Friday at work, Very good...extremely rich, I couldn't finish mine but had fun trying.
