Pisco Sour (the National Cocktail of Peru) Recipe

On the Peruvian side of the border, there is no question about the origins of Pisco – it’s Peruvian.

This recipe came on a leaflet with a bottle of Peruvian Pisco. It was also told to me by a Peruvian colleague, this is the way it’s made in Peru.

INGREDIENTS
  • 2 oz. Pisco
  • 1 oz.gum syrup (simple sugar syrup)
  • 1 oz. of lemon or lime juice
  • 1/2 egg white
  • ice
  • angostura bitters
INSTRUCTIONS
  1. Measure out the first four ingredients and put them in a shaker with ice, shake well, strain into a glass and top with a few drops of bitters (the egg white should make it foamy).

  • If you are going to drink Pisco, make sure you get up and walk around some, and have something to munch on, if not? You will fall down when you try to get up. Pisco goes down smooth, but it can pack a punch.

  • I love pisco sours!

    To make them like they do in Peru, the lime juice needs to be FRESH and should be squeezed from key limes.

    Caution: They go down dangerously easy!
