Shaved Fennel, Orange and Pistachio Salad Recipe

This is a combination between a summer dish from Maestro and Aïda’s original salad. Just by adding oranges.

INGREDIENTS
  • 3 medium heads fennel, very thinly sliced crosswise (about 7 cups)
  • 1/2 cup roasted and salted pistachios, coarsely chopped
  • 3 tablespoons olive oil
  • 1 tablespoon freshly squeezed lemon juice
  • 1 tablespoon freshly squeezed orange juice
  • 1 Orange cut in supremes
  • 1 teaspoon finely grated orange zest
  • 1 teaspoon finely grated lemon zest
INSTRUCTIONS
  1. Combine the citrus juices with salt and pepper. Add the oil and mix well.
  2. Toss the fennel with the dressing, salt and pepper. Serve in a bowl, decorate with the orange and sprinkle with the zests.
