They can be runny or dense, savory or sweet, strong or subdued, chunky or smooth, spicy or bland, steaming or chilled, red, green, black, white, or just about any color. But regardless of such endless variation, a sauce is consistently the one element most likely to make or break a meal. It is the paste that holds a dish together—sometimes literally binding other ingredients; other times adding essential flavors or texture to the mix. We're not ones to shy away from sauciness: peanut sauce, pizza sauce, all combinations of pasta and sauce. And of course, Chowhounds are hot for sauce, too.
