	<p>Janine Falvo, chef de cuisine of <a target="blank" href="http://www.chow.com/places/51603">Carneros Bistro &#38; Wine Bar</a> in Sonoma, California, cleans a rack of lamb using a piece of string. She ties one end to the sink&#8217;s faucet (an oven handle would work as well), and then loops the other end around the bone, scraping off the meat and fat with an upward motion.</p>
