Once you’ve made your way through the Rattlesnake ( the hottest Bar in Dallas) into the Restaurant, you enter a totally new experience in dining which is unforeseen before in Dallas. We will come back to the bar, just wait until later, for sure. But the various uniquely individually designed rooms, the massive chef’s table and the totally open kitchen concept while no one part is unique, the total creative sense of Executive Chef and Owner Dean Fearing’s is unlike any other in the entire United States. One of the originators of Southwest Cuisine and a founding father of fine dining in Dallas, Dean is a master culinary craftsman and a dining room entertainer. As he made his way throughout his dining room, every table that surrounded us for our early 6 pm seating was interestingly enough full of family celebrations. I could not keep up with how many times Dean had to say Happy Birthday as he pranced around his dining room with his custom cowboy boots on. Fearing insisted to me that his namesake restaurant takes full advantage of newly discovered locally home grown products which he would immediately implement into his recipes while maintaining some of his marquee items that made a name for him in the culinary arts worldwide. Every month , the menu has 4 or 5 marquee changed based on his new discoveries The fact that Dean , personally described most of the courses that we experienced made me look like a celebrity guest in his dining room. Chef De Cuisine Eric Dreyer ably filled in for Dean as he constantly strolled the dining room. Our first course, boasted 4 uniquely different flavors with three conflicting textures which blended together as a Tuna Tatare with Asian Noodles gelled by a dollop of savory Ice Cream. Melting away in your mouth which shocked the heck out of me and there were no surprises held back the rest of the evening. The second course, was Dean’s tortilla soup which has been bottled and sold at the upscale grocery market for years. But the new Fearing’s version has been tweaked with a new tasty touch of Jalapeno. You will find the best Restaurant service in Dallas at Fearing‘s on point without being a pain in the butt. The third course was a barbecued Texas Bob White Quail on an Iceberg wedge with Point Reyes Blue Cheese Dressing, Apple Smoked Bacon and ripe Tomatoes. For us, Dean added home cured Texas Smoked Pork Belly to take us beyond another level. The newest entrée on the menu that he shared with us was a flaky pan seared Halibut with a chili based seasoning, accompanied by perfectly prepared grits and Fried Green Tomatoes ,which were very crispy for the light batter. Next , the manly Buffalo Steak was so lady tender and lean, the flavors jumped off of the plate after 48 hours of Maple soaking and featured his best creation of the entire night ; a Jalapeno Cheese Taquito filled with a Butternut Squash puree. It is the greatest food item that I have ever tasted. After going crazy through deserts, I was thinking about Back at the Bar, you have to take your weekly paycheck at least once in your lifetime to check it out. The Rattlesnake Bar menu ranges from hand made nachos, tacos and grilled flat breads to mesquite wood grilled all- American hamburger But it’s the ladies part of the scene that drawns the crowds. All Dean’s amazing creativity with the menu and Restaurant décor and you leave the Ritz saying, “ I’m coming back to The Rattlesnake Bar!”-COLLAPSE

I thoroughly enjoyed our visit to Fearing's restaurant inside the Ritz Carlton, Dallas.
Go a bit early, and enjoy their properly made Martinis (almost as good as my own).
We were served lovely complimentary appetizers and little extras like a chilled mini Margaritas, gazpacho, and wonderful guacamole on a fried tortilla chip.

Dinner itself was very good, especially, my main course of "English Cut NilGai Antelope on Jalapeno Wild Game 'Bangers and Mash' with Brown Ale Mustard Sauce and Yorkshire Pudding" cooked perfectly. (Although, I found the food portions to be too large - I couldn't finish my main dish, plus, there was a lot going on in terms of ingredients...)
Service was thoroughly professional, yet, in that wonderfully Texas way, totally friendly and down to earth.
Wine list is big enough to please all tastes and budgets.
Decor is wonderfully thought through, although, the main dining room overlooking the kitchen seemed a little too loud, and could be noise-proofed a bit more.
I'd go back.
