FYI it looks like the soon-to-open NY Pie in Waltham will be offering Italian Beef sandwiches. http://bostonrestaurants.blogspot.com/2011/05/ny-pie-to-open-in-waltham.html. Also, I recently made the trip down to Weymouth for a beef from Windy City Eats, which I agree was solid, but wouldn't stand out in Chicago. Worth driving Weymouth occasionally though!
