Carpaccio in Austin is a no-brainer. IMHAO (In My Humble Ass Opinion) by far the best Carpaccio here in CapCity is served at Trio @ The Four Seasons. Complex, sexy-as-all-get-out / share-me-if-you-dare-to composited of raw/seared/highly-marbled cow glory, adorned with a mini Arugula Salad, with a sunny-side up quail egg riding side saddle. Served to an adjoining diner, I heard, "I love it too...+READ Carpaccio in Austin is a no-brainer.
