A few years ago, when I moved into the neighborhood, I noticed Hotcakes, with it's cute pink storefront. I ventured in, browsed the case, filled with cookies and pastries. I settled on a shortbread that looked wonderful. It ended up being rather stale and I was turned off from the place. Too bad, I thought, could be such a nice place, but if they are selling stale cookies, it isn't living up to potential.
Move forward a year, and I decide to give the place another chance, and I am so glad I did! They changed their focus to cakes and cupcakes, with a small amount of cookies and other pastries. I tell them about my first experience and they are sad that I didn't return sooner to let them know, and give them a second chance. The cakes in the case look so wonderful, I order a small cake for a birthday and she says they will make it fresh to order.
The cake was moist, flavorful and perfect! It was even too big for the box! They have renewed my faith in them and I return every year for my birthday cake and to buy a dozen small cupcakes for special occasions.
This last week, I read on Chow about Hotcake's tres leche cupcakes and had to go get some for our girl's night out. Needless to say, I was the hit of the party! Way better than Sprinkles or that Dainty Cakes!-COLLAPSE
