Easy Blender Hollandaise Sauce

Most people don’t try making hollandaise sauce at home because the classic method requires a water bath and constant attention to ensure a perfectly textured sauce. In this fast and easy version, we use a blender to emulsify butter and egg yolks into a perfectly smooth sauce with a hint of brightness from lemon juice. Use it for classic eggs Benedict, or drizzle it over broiled fish or steamed veggies.

INGREDIENTS
  • 2 large egg yolks
  • 1 tablespoon freshly squeezed lemon juice
  • 8 tablespoons unsalted butter (1 stick), melted
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
INSTRUCTIONS
  1. Fill a large saucepan a quarter of the way full with water and bring it to a simmer over high heat. Remove it from the heat and set aside.
  2. Place the egg yolks and lemon juice in a blender and blend on medium speed until the mixture lightens in color, about 30 seconds.
  3. Reduce the blender speed to low, remove the small cap from the blender lid (the pour lid), and slowly drizzle in all of the melted butter. Turn off the blender, add the salt and pepper, and pulse to combine.
  4. To keep the hollandaise warm, place the blender pitcher directly in the reserved hot water until ready to use.

    I have made this several times. I originally got the recipe from a TV Program called the Traveling Gourmet staring Mike Galena (sp?) This workes best if you have a bleander with a glass cup. The make, assemble all ingredients and fill bleander cup with steaming hot water. While cup heats, melt the butter and then drain the blender cup and add egg yolks and lemon juice or dash of vinegar and cayenne Pepper, my recipe calls for these things. pulse eggsto mix with juice and spices and then slowly add melted butter and mix on low to med. speed until mixture thickens so it coats the back of a spoon. Keep warm over hot water until us. i also read the recipe in a old cookbook, from the late 1930s early 1940s, when Fred Wareing first introduced the Warning Blender

    This recipe is terrible because it leaves out the most important ingredients. I refer to the Tarragon, Chervil and a dash of Tabasco. WITHOUT THESE INGREDIENTS IT ISN'T HOLLANDAISE!!!
