Easy Waffles Recipe

Easy Waffles

Waffles made with buttermilk or brown butter are delicious, but when the waffle craving hits on Sunday morning, no one wants to leave the house to buy groceries. This recipe uses ingredients you probably already have in your pantry and fridge, like butter, milk, eggs, flour, and baking powder, and it only takes a few minutes to mix together. Freeze any leftover waffles in between sheets of parchment paper inside of a resealable bag, and toast one when you need a quick weekday breakfast.

Special equipment: You’ll need a pastry brush for this recipe.

INGREDIENTS
  • 3 cups all-purpose flour
  • 3 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon fine salt
  • 3 large eggs
  • 3 1/4 cups milk (not nonfat)
  • 2 sticks (8 ounces) unsalted butter, melted
  • 1 tablespoon vanilla extract
  • 1 teaspoon orange or lemon zest (optional)
  • Vegetable oil, for brushing the waffle iron
  • Maple syrup, apricot syrup, or strawberry sauce, (optional)
INSTRUCTIONS
  1. Heat the oven to 250°F and arrange a rack in the middle. Set a wire rack on a baking sheet and place it in the oven.
  2. Whisk together the flour, sugar, baking powder, and salt in a large bowl to aerate and break up any lumps; set aside.
  3. Place the eggs in a large bowl and whisk until they’re just broken up. Add the milk, melted butter, vanilla, and zest, if using, and whisk until evenly combined.
  4. Add the milk mixture to the flour mixture and stir with a spoon or rubber spatula until the flour is just incorporated and no streaks remain. (The batter may have a few lumps.)
  5. Heat the waffle iron to medium according to the manufacturer’s instructions. Once heated, brush the iron with vegetable oil, fill it with batter, close the lid, and cook until the waffle is golden brown (when the steam starts to diminish from the waffle iron, you can open the top and peek for doneness). Transfer to the wire rack on the baking sheet in the oven.
  6. Repeat with the remaining batter, brushing the iron with oil between each waffle. Serve immediately with maple syrup, apricot syrup, or strawberry sauce (if using).

    I got around 13 square waffles out of this recipe. They were good, but I didn't really taste the butter in them compared to lower-fat waffle recipes I've tried, so I think I'll stick with those in the future. I did use mostly whole-wheat flour (ran out of all purpose). We had them topped with both stewed apples and scrambled eggs.

    Can these be made ahead and frozen for busy mornings? Has anyone tried these using whole wheat flour? Thanks for sharing!

    I liked this recipe and will make it again. One must have a really good waffle maker [for all waffles] and the brushed-on oil is what helps it crisp up [think fried chicken]. As for those who are having a cow about the ingredients [divadmas], at least you know what is in these as opposed to all the additives to low-fat/no-fat foods to make them taste better. Soleil38 is absolutely right. Besides, you aren't supposed to sit down and eat the entire batch at one time. Congratulations Diamond645. I, too, eat local and prefer to make everything from scratch so I know what's in it.

    To Divadmas: I find it very sad that you like to "at least pretend you eat healthy". Personally, I don't have to pretend. I do eat healthy. And because I do, I AM healthy. Also, I strongly believe that a treat once in a while, like eating 7 waffles with 2 sticks of butter in them, does great, great things to both my taste buds and my occasional slow Sundays. So please refrain from bashing people's recipes online. If you want to give a hard time to those posting "unhealthy" recipes online, I invite you to google "candy recipes", "dessert recipes", "corn syrup", or anything along those lines. That might keep you busy for the rest of your life. But whatever you choose, don't forget to get up and go for a little walk. Too much time at the computer might make you get just as big as.... well... someone who would eat 2 sticks of butter every morning. Relax and enjoy life a little. If you don't want to enjoy life, well, just don't eat waffles. And Amy Wisniewski, very good recipe. I love the simplicity of it and how yummy and crispy they end up being. Yum.

    I haven't tried the recipe yet but it sounds yummy! I am a waffle lover. I don't have a waffle iron though. I have a great pancake recipe and this looks even better. Can I use this recipe to make pancakes?

    I made my own waffles this morning and used 1 Tblsp of canola oil for three waffles [for two of us]. No butter on top, either. Still delicious. I make a dry mix of flour, baking powder, small amt. of sugar, and pinch of salt to have around. Then it's easy to use part of the mix and add wet ingredients. I use only 1 egg for two of us. Try whipped cottage cheese as a topping along with small amt. of syrup or preserves. It's protein and flavor together.

    @ Diamond 645... Congratulations on being cancer-free. I am a culinary arts student and am looking to open a catering business using locally grown produce and meats. I have already seen the benefits of supporting local businesses and farms. I, too, use a similar recipe for my pancakes but, I use water instead of milk. It makes a flatter cake that stands up to the syrup. I also make my own syrup because I can control the sugar content.

    @divadmas...nobody is trying to kill you. Like any good cook, you have the option of omitting or substituting any ingredient. I don't have a waffle iron, but I make a similar batter for pancakes. I merely use a bit of butter on top when it's cooked and top with my hubby's homemade syrup. I never add oil or butter to the batter....but that is my choice, just like any recipe on this site or any other site it's YOUR choice whether or not you want to use it, or rearrange it. NOBODY IS FORCING YOU AND NOBODY IS TRYING TO KILL YOU! Please be realistic and take responsibility for what YOU put into your own body. I do, that's why I am now cancer free, because I choose to eat only locally grown food, not processed stuff we buy at the stores!! EAT AND COOK RESPONSIBLY!!! Thanks for the recipes!!!

    these sound great. but i at least like to pretend i'm eating healthy. seriously, a half pound of butter for 7 waffles? + more for topping? who can eat these? rating 0 for trying to kill me.
