Vegetarian Victorian Christmas Pudding Recipe

If you want a Christmas Pudding that does not call for “suet”, this is a great recipe.

INGREDIENTS
  • 3/4 cup chopped dates
  • 3/4 cup blanched almonds
  • 3/4 cup raisins
  • 3/4 cup glace cherries
  • 3/4 cup candied orange peel
  • 3/4 cup dried currants
  • 1 3/4 cup dry breadcrumbs
  • 1/2 cup unsalted butter
  • 1/2 cup brown sugar
  • 1/2 cup honey
  • 4 eggs well beaten
  • 1/4 cup good brandy
  • 1 teaspoon ground allspice
INSTRUCTIONS
  1. Wash 8 250 ml mason jars and lids with screw bands.
  2. You will need a pot with a lid that the jars will fit in.
  3. Put enough water in the pot to come 1/2 way up the jars and bring to a boil.
  4. Dice all fruit and nuts till finely chopped and mix with the breadcrumbs.
  5. Melt butter and add honey and sugar.Add to fruit mixture.
  6. Add beaten eggs, brandy and 1 tsp of ground allspice.
  7. Put mixture into jars, steam for 15 mins without lids, then put lids on jars (loosely tighten bands) and steam for 1 hour.
  8. Cool and keep in a cool place until ready to use. Steam for 1/2 hour to reheat.
  9. Serve with custard sauce or vanilla ice cream.
