Blueberry Drop Cookies Recipe

Cookies are a hit with everyone, no matter what their age is. Moreover a cookie treat comes in handy for mothers when they gotta make their way out of difficult situations!! This recipe gives the good old cookies a new twist. Try it out and let the new twist work its magic on your taste buds.

INGREDIENTS
  • 1/2 cup unsalted butter, at room temperature, plus butter for greasing the cookie sheet
  • 1 cup sugar
  • 1 egg, lightly beaten
  • 1/2 cup milk
  • Grated rind of 1/2 lemon
  • 2-1/2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 2-1/2 teaspoons baking powder
  • 1 cup blueberries
INSTRUCTIONS
  1. Preheat oven to 350°F. Grease a cookie sheet with butter.
  2. Cream the butter. Gradually add the sugar and mix well. Add the egg, continuing to beat.
  3. In a separate bowl, combine the milk and lemon rind and, in another bowl, combine the flour, salt and baking powder. Add the milk and flour mixtures alternately to the butter, beginning and ending with the flour.
  4. Gently stir in the blueberries. Drop by heaping teaspoonfuls about 1 inch apart onto the cookie sheet. Bake for 12 to 15 minutes, or until lightly browned.
  5. Yields 4 to 5 dozen cookies.
