Seafood Jalapeno Explosion Recipe
My college girlfriend only ate fish. This originally put a damper on the tailgaiting. I finally decided to earn some brownie points and find something unique… let’s just say, these helped me score in more ways that one!
The bacon was added a few years later when I was no longer with said vegetarian.
- 16 jalapeno peppers, stems and seeds removed
- 1/3pound of shrimp
- 1/3 pound crab meat
- 1/3 pound sushi grade ahi tuna
- 1/4 cup onion, finely diced
- 3 slices bacon, sliced into 1" pieces
- olive oil
- salt and pepper
- old bay seasoning
- In a small skillet, saut bacon pieces, garlic, onion and olive oil for 2 minutes. Remove bacon pieces from skillet.
- Add crab, shrimp, tuna, salt, pepper, old bay seasoning and saut for an additional 2-3 minutes. Remove from heat and allow to cool.
- Preheat grill for medium heat
- Stuff some bacon and some of the seafood mixture into each jalapeno.
- Place on lightly oiled grill grate and allow to cook for 6-8 minutes, turning occasionally so all sides are cooked.
- Remove from heat and serve.
