Seafood Jalapeno Explosion Recipe

My college girlfriend only ate fish. This originally put a damper on the tailgaiting. I finally decided to earn some brownie points and find something unique… let’s just say, these helped me score in more ways that one!

The bacon was added a few years later when I was no longer with said vegetarian.

INGREDIENTS
  • 16 jalapeno peppers, stems and seeds removed
  • 1/3pound of shrimp
  • 1/3 pound crab meat
  • 1/3 pound sushi grade ahi tuna
  • 1/4 cup onion, finely diced
  • 3 slices bacon, sliced into 1" pieces
  • olive oil
  • salt and pepper
  • old bay seasoning
INSTRUCTIONS
  1. In a small skillet, saut bacon pieces, garlic, onion and olive oil for 2 minutes. Remove bacon pieces from skillet.
  2. Add crab, shrimp, tuna, salt, pepper, old bay seasoning and saut for an additional 2-3 minutes. Remove from heat and allow to cool.
  3. Preheat grill for medium heat
  4. Stuff some bacon and some of the seafood mixture into each jalapeno.
  5. Place on lightly oiled grill grate and allow to cook for 6-8 minutes, turning occasionally so all sides are cooked.
  6. Remove from heat and serve.
