Drunken Clams Recipe

Total Time: 10 minutes | Makes: one

This appetizer was created for a menu one night, and those that ordered came back and asked for it on nights it was not being offered.

INGREDIENTS
  • 1 clove of garlic
  • 1 shallot
  • 6 oz blue moon
  • 1 tbs olive oil
  • 2 tbs unsalted butter
  • 4 tbs mango puree
  • 4 tbs diced mango(for garnish)
  • 1 tbs sweet chili sauce
  • orange zest
  • 1 pinch of chopped chives, cilantro, and parsley
  • 3 crostini from french baguette(slice and rub with evoo, salt, and pepper) baked till toasty
INSTRUCTIONS
  1. put a sautee pan on the fire and heat with evoo till evoo starts to haze
  2. add clams, garlic, and shallots till garlic and shallots almost brown
  3. add blue moon, orange zest, sweet chilie sauce and mango puree
  4. dress crostini and place in 400 degree oven till browned (about 5-6 minutes)
  5. when clams start to open, remove them to serving dish
  6. after last clam is plated, add butter to pan along with fresh herbs
  7. add crostini around the dish, put diced mango on top of clams, and pour sauce over the clams
