Drunken Clams Recipe

This appetizer was created for a menu one night, and those that ordered came back and asked for it on nights it was not being offered.
INGREDIENTS
- 1 clove of garlic
- 1 shallot
- 6 oz blue moon
- 1 tbs olive oil
- 2 tbs unsalted butter
- 4 tbs mango puree
- 4 tbs diced mango(for garnish)
- 1 tbs sweet chili sauce
- orange zest
- 1 pinch of chopped chives, cilantro, and parsley
- 3 crostini from french baguette(slice and rub with evoo, salt, and pepper) baked till toasty
INSTRUCTIONS
- put a sautee pan on the fire and heat with evoo till evoo starts to haze
- add clams, garlic, and shallots till garlic and shallots almost brown
- add blue moon, orange zest, sweet chilie sauce and mango puree
- dress crostini and place in 400 degree oven till browned (about 5-6 minutes)
- when clams start to open, remove them to serving dish
- after last clam is plated, add butter to pan along with fresh herbs
- add crostini around the dish, put diced mango on top of clams, and pour sauce over the clams
