"Grate" Balls of Fire: Grilled Meatballs Recipe

Looking for a way to change up meatballs? Why not try grilling them!

INGREDIENTS
  • 1 pound ground beef
  • 1 pound ground pork
  • 2 Bratwurst Italian sausages
  • 2 cups stale Italian bread crumbs
  • 1 8oz pkg fancy shredded 6 cheeses Italian cheese
  • 2 cloves garlic, minced
  • 2 eggs
  • 1 tablespoon fresh chopped Italian flat leaf parsley
  • 1 tablespoon fresh chopped basil
  • 1-1 1/2 cups lukewarm water
  • 1 cup olive oil
  • 1 tablespoon of Kosher salt (to your taste)
  • Pepper to taste
INSTRUCTIONS
  1. Remove sausage casing from bratwurst
  2. In a large mixing bowl, combine beef, pork, bratwurst, garlic, eggs, cheese, parsley, basil, olive oil, salt and pepper
  3. Pour 3/4 cup of water into bread crumbs and allow to soak for 2 minutes
  4. Add to meat mixture and begin kneading mixture together
  5. Slowly add the remaining 3/4 cups of water and kneed thoroughly to combine all ingredients
  6. Form mixture into golf ball sized or large meatballs and place on cookie sheet
  7. Place on grill on LOW temperature and keep lid closed (ideally dome temp. should be at 350F)
  8. Rotate meatballs every 2-3 minutes and remove when done (be careful not to overcook)
