Chilli Bean & Tomato Rice Recipe

Difficulty: Easy | Total Time: 30 to 40 mins | Makes: 4 servings

INGREDIENTS
  • 2 tbsp Sunflower oil
  • 1 Whole garlic clove
  • 200g/7oz Long grain rice
  • 2 tbsp tomato puree
  • 500ml/18fl oz Vegetable stock
  • 1 small Red onion
  • 1 green chilli, seeded & finely chopped
  • 400g/14oz can chilli beans in chilli sauce
INSTRUCTIONS
  1. Heat oil in a pan & fry the garlic clove until dark golden.
    Add the rice & fry, stirring continuously, until golden, then dicard the garlic
  2. Stir in the tomato puree into the rice & cook, stirring, for 1 minute. Pour in the stock, then add the onion, green chilli, chilli beans and season.
  3. Bring to the boil, stir & simmer covered for 30 mins or until the rice has absorbed the liquid.
  4. Can be served hot or cold
