Picnic Perfect Jerk Chicken & Pineapple Skewers Recipe
This works great with chicken and shrimp. The spicy earthy tones of the marinade work perfectly with the sweetness of the grilled pineapple chunks.
- 1 pound Tyson chicken tenders, cut tenders in half cross-wise
- 1 tablespoon olive oil
- 2 limes, juiced
- 2 tablespoons jerk seasoning
- 1 fresh pineapple, cored and cut into 1″ cubes
- Prepare your grill to medium high heat.
- Mix in a large bowl the oil, lime juice & jerk seasoning. Mix in chicken tenders until evenly coated with seasoning. Let marinate for 10 minutes.
- On each skewer place 3 pieces of chicken and 3 pieces of pineapple, alternating them.
- Grill for 3 minutes on each side, or until chicken is cooked through to 165 degrees.
