Black Bottom Cupcakes Recipe

My grandmother gave me this recipe from The Two Billion Dollar Cookbook, a collection of recipes from the people effected by the Exxon Valdez Alaskan Oil-Spill, in which my grandma was the artist for the cover, and my grandpa was currently working for them at the time.

INGREDIENTS
  • One 8 oz package of cream cheese, softened
  • 1 beaten egg
  • 1/3 cup sugar
  • 1/8 teaspoon salt
  • 6 oz package of chocolate chips
  • 1 1/2 cups flour
  • 1 cup sugar
  • 1/4 cup cocoa
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup water
  • 1/3 cup vegetable oil
  • 1 tablespoon vinegar
  • 1 teaspoon vanilla
  • Cupcake Liners
INSTRUCTIONS
  1. Preheat oven to 350 degrees
  2. In a bowl, combine cream cheese, egg, 1/3 cup sugar, and 1/8 teaspoon salt.
  3. Beat well.
  4. Stir in chocolate chips.
  5. Set aside
  6. In another bowl: Sift flour, 1 cup sugar, cocoa, baking soda, and 1/2 teaspoon salt.
  7. In yet another bowl: Mix together water, oil, vinegar, and vanilla.
  8. Add to the flour mixture. Beat well.
  9. Fill cupcake liners 1/2 full with the chocolate flour mixture. (Don’t fill more than this or the cupcake will over rise and burn on the edges)
  10. Then drop one tablespoon cheese mixture on top of each cupcake.
  11. Bake for 20 minutes.
  12. Let cool, before removing from pan.
