Black Bottom Cupcakes Recipe
My grandmother gave me this recipe from The Two Billion Dollar Cookbook, a collection of recipes from the people effected by the Exxon Valdez Alaskan Oil-Spill, in which my grandma was the artist for the cover, and my grandpa was currently working for them at the time.
- One 8 oz package of cream cheese, softened
- 1 beaten egg
- 1/3 cup sugar
- 1/8 teaspoon salt
- 6 oz package of chocolate chips
- 1 1/2 cups flour
- 1 cup sugar
- 1/4 cup cocoa
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup water
- 1/3 cup vegetable oil
- 1 tablespoon vinegar
- 1 teaspoon vanilla
- Cupcake Liners
- Preheat oven to 350 degrees
- In a bowl, combine cream cheese, egg, 1/3 cup sugar, and 1/8 teaspoon salt.
- Beat well.
- Stir in chocolate chips.
- Set aside
- In another bowl: Sift flour, 1 cup sugar, cocoa, baking soda, and 1/2 teaspoon salt.
- In yet another bowl: Mix together water, oil, vinegar, and vanilla.
- Add to the flour mixture. Beat well.
- Fill cupcake liners 1/2 full with the chocolate flour mixture. (Don’t fill more than this or the cupcake will over rise and burn on the edges)
- Then drop one tablespoon cheese mixture on top of each cupcake.
- Bake for 20 minutes.
- Let cool, before removing from pan.
