Banana-nana Muffins Recipe

This is one of my favorite banana breads. It took a couple of tries to prefect, but I finally found the right texture and serious banana flavor. Its pretty simple to make, too!

INGREDIENTS
  • 1/3 cup melted butter
  • ½ cup granulated sugar
  • ¼ cup light brown sugar
  • 1 egg
  • ¾ cup plain yogurt
  • 4-5 ripe bananas (about 1 ¾ cups mashed)
  • 1 ¾ cup AP flour
  • 1.5 tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon
INSTRUCTIONS
  1. Heat oven to 350F
  2. Melt butter in a mixing bowl, add sugars and cream together. Whisk in the egg, and mashed bananas.
  3. In a separate bowl, mix flour, baking soda, baking powder, salt and cinnamon together and then stir them into the banana mixture. The batter might be a little lumpy from the bananas, but stir until it appears to be smooth.
  4. Pour batter into a greased muffin tins and bake 20-22 minutes.
