Spinach, Chive and Cream Cheese sauce Recipe

Difficulty: Easy | Total Time: 10 minutes | Active Time: | Makes: 1 cup of sauce to be used as you like.

A very versatile, delicate sauce. Goes well with smoked trout, sole,etc.

INGREDIENTS
  • 250g - Baby spinach
  • 125g - Cream cheese
  • 50g - Fresh garlic chives
  • 1 teaspoon fresh lemon juice
  • Salt and pepper to taste
INSTRUCTIONS
  1. Wilt fresh spinach with 1/4 cup of water in a sauce pan, for two minutes. Set aside.
  2. Chop fresh garlic chives, place in a bowl with hand held blender or food processor.
  3. Place cream cheese, chives, lemon juice into blender and whiz.
  4. Add wilted spinach to blender/food processor, leaving water/juice in sauce pan to be discarded. Salt and pepper to taste.
