No Thanksgiving table is complete without a bowl of cranberry sauce. Instead of using the canned stuff, make your own in just a half hour.

Game plan: The cranberry sauce can be made up to 2 days ahead. Store in the refrigerator and let come to room temperature before serving.

INGREDIENTS
  • 12 ounces cranberries (3 cups), thawed if frozen
  • 3/4 cup granulated sugar
  • Finely grated zest of 1 medium orange
  • Juice of half a medium orange
INSTRUCTIONS
  1. Place all ingredients in a medium saucepan over medium-high heat and bring to a boil, stirring to dissolve the sugar.
  2. Reduce the heat to low and simmer until the cranberries are soft and start to fall apart, about 30 minutes. Remove from heat and let cool—the sauce will thicken as it cools.

    It is ridiculously simple to make your own cranberry sauce, and once you have homemade, you will never go back to the canned junk. Definitely add some booze (I either use a bit of red wine or bourbon depending on what's around) and also just a dash of red pepper flake (not enough to make it spicy, just a dash!)... this seems to take that cloying sweetness away, brings it back into savory. Also great dumped on brie and wrapped in puff pastry.

  • I usually add some pieces of tangerine to the mix as it jells and also a shot or three of Cointreau. Teenagers love it since the alcohol isn't cooked off.
