Southwest Pilaf Recipe

This was the side to the Chili-Lime Halibut recipe (picture) I came up with for TheKitchenHotline.com. It’s super healthy and delicious.

INGREDIENTS
  • 2 cups cooked brown rice
  • 1/2 a can chipotle white corn (with some juice)
  • 1 can green chilies
  • Salt & pepper to taste
INSTRUCTIONS
  1. Combine all ingredients in a hot skillet and toss until heated through.
