Monster Chip Cookies Recipe
I started a tradition a few years back, of giving out baked treats for Halloween. I feel better about giving homemade treats than I do sugar loaded candy. I think it taste better and better for the kids. I know most of the kids, and their parents, who come here for Halloween so I know they will not get tossed. Sometimes homemade treats are frowned upon, anyway these cookies are always a big hit and even the kids look for them and comment on them. I have also given them as part of a Christmas package, they are real good.
- 1 cup shortening
- 1/2 cup butter, softened
- 1-1/3 cups sugar
- 1 cup packed brown sugar
- 4 eggs
- 3 teaspoons vanilla extract
- 1 teaspoon lemon juice
- 3 cups all-purpose flour
- 1/2 cup quick-cooking oats
- 2 teaspoon baking soda
- 1-1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 4 cups (24 ounces) semisweet chocolate chips
- 2 cups chopped nuts
- In a mixing bowl, cream shortening, butter and sugars until light and fluffy, about 5 minutes. Add eggs, one at a time, beating well after each. Add vanilla and lemon juice. Combine the dry ingredients; add to creamed mixture and mix well. Stir in chips and nuts.
- Drop by 1/4 cupfuls 3 in. apart onto lightly greased baking sheets. Bake at 350 F. for 14-16 minutes or until lightly browned and center is set. Cool for 2minutes before removing to wire racks. Yield: about 3 dozen.
