Soba Noodle Kugel Recipe

I have always liked salt and pepper noodle kugel and I love soba noodles and thought combining the two would be a winning idea and it is, the noodles get crispier and makes this a wonderful fusion dish that I created for http://joyofkosher.com.

INGREDIENTS
  • 1/3 cup oil
  • 1 small onion, finely chopped
  • 4 scallions, finely chopped
  • 12 oz. soba noodles
  • 4 eggs, beaten
  • 1 tsp. salt
  • 1 tsp. pepper
INSTRUCTIONS
  1. Heat 2 tbsp. oil in a saute pan. Add onions and saute on medium heat until translucent.
  2. Cook noodles per package directions, rinse, drain and toss with 1 tbsp. oil, allow to cool for 15 minutes.
    Mix eggs with salt and pepper and add to noodles.
  3. Preheat oven to 375. Pour the rest of the oil into a 9×9 inch baking dish or loaf pan. Heat pan with oil until hot. Pour noodle mixture into pan and bake for 45 minutes or until golden. Serve with a ponzu dipping sauce if dessired.
