Grilled Raspberry Chocolate Yummy Recipe

Makes 2 quesadillas

With fruit and chocolate in the same recipe, this dessert hits all the sweet spots!
INGREDIENTS
- 4 large tortillas
- 16 ounce container whole ricotta cheese
- 3/4 cup confection sugar
- 1 tsp vanilla
- semi-sweet chocolate morsels
- 1 container fresh raspberries
INSTRUCTIONS
- To Make Filling:
Combine in mixing bowl ricotta cheese, confection sugar, and vanilla
use mixer on low for 30 seconds - To Make Quesadilla
Spread 1/3 of the filling on one tortilla (this is the bottom of the sandwich)
Sprinkle semi-sweet morsels on tortilla.
Lay second tortilla on top.
Spread light film of filling on top.
Cut raspberries in half and layer onto the top tortilla.
Add a few more chocolate morsels for looks. - Grilling
Set grill to medium heat or 400F. Use a grilling spray or wipe the raised rails with
oil.
Slide the quesadilla off the cutting board onto the grill and close lid
Check in 3-4 minutes by slightly lifting an edge to see the sear marks
quarter in 2-3 minutes. Keep lid closed.
Check for firmness of quesadilla. Crispy, firm is perfection.
Determine whether to give it a couple of more minutes or off it comes onto the
cutting board.
Let stand for 2 minutes.
Cut and serve.

This is a griling recipe, but you can try it in the oven if you'd like. The cook time might be different, and defintiely the taste will too.
Yes you can sub puff pastry too.
