TAILGATING MENU ALERT: Grilled Stuffed Mushroom Recipe
This recipe for grilled stuffed jumbo white mushrooms cooks beautifully on the grill. It’s easy and impressive served as an appetizer or side.
Serves: 4 portions for appetizers, or side dish
- 16 large white mushrooms, washed, stems removed
- 1 small package of Stuffing Mix (follo w simple directions, adding butter and water, do not add chopped vegetables)
- 1 package Frozen Spinach, thawed and well drained. OR 1 bag of Fresh Spinach, washed, heated in sauce pan with no added water, only the remaining water from cleaning.(Stir constantly over Med. Heat for 3 minutes until spinach is wilted. Do not over cook)
- Salt and pepper to taste
- 1/4 cup grated mozzarella cheese
- 1/4 cup grated yellow mild cheddar
- Dash of Italian salad dressing
- [PREP]
- 1. Prepare stuffing mix
- 2. Prepare spinach, add salt and pepper to taste
- 3. Place stuffing into washed, stemmed mushroom to fill 1/2 of stem void.
- 4. Place spinach to fill the remaining half, stuffing slightly over the top of mushroom.
- 5. Sprinkle a dash of Italian Salad Dressing on spinach.
- 6. Sprinkle approx. 1/2 teaspoon of grated mozzarella cheese on each.
- 7. Sprinkle approx. 1/2 teaspoon of grated yellow cheddar on each
- [GRILL]
- 1. Place stuffed mushrooms on pre-heated grill (8 to 10 minutes), low-low/med heat. For charcoal, preheat your grill after the red hot peak, gray coals only (8-10 minutes), lid closed.
- 2. Grill 8-10 minutes on low-low/med heat, lid down. Timing depends on how hot your grill is.
