Pesto Chicken Alfredo Recipe

Pesto Chicken Alfredo is a marriage between two great Italian pasta recipes. The subtle creamy flavor of a rich Alfredo sauce recipe and the brilliant texture, color and freshness of the pesto.

I can think of only a few culinary marriages that are better.

Using both techniques of homemade pesto and the original Alfredo Sauce recipe created by Alfredo himself and you are about to partake in the creation of a masterpiece.

Make the homemade pesto first. You don’t need a lot and you can always use it for other recipes such as a dollop in your Minestrone soup.

Then begin with the Alfredo.

INGREDIENTS
  • 1 lb Fettucini
  • 12 tbsp of butter
  • 2 cups of heavy cream
  • 1 cup freshly grated parmigiano
  • 3-4 tbsp of pesto sauce
  • Salt & Pepper to taste
INSTRUCTIONS
  1. Boil a large pot of water and add the fettucini
  2. Melt the butter in the pan on low heat as you would to make a basic Alfredo Sauce and then stir in the cream. As you begin to cook your fettucini whisk the butter and cream to make thicken. Now plop in a couple of table spoons of Pesto and stir.
  3. Add the fettucini, the chicken and the parmigiano and toss together.
