Brown and Wild Rice with Leftover Chicken Recipe

Quick pressure cooker recipe for leftover chicken.
INGREDIENTS
- 1 1/2 cup brown rice
- 3/4 cup wild rice
- 3 double chicken boullion cubes (I use Knorr) or equivalent granules
- 1 tsp salt
- 1/2 tsp red pepper flakes
- 1/4 tsp coursely ground black pepper
- 1 small can mushroom stems and pieces with liquid
- 5 1/2 cups water
- 1-2 cups small cubes cooked chicken
- 2 diced carrots
- (optional: up to 1 cup small peas)
- 1 small sweet onion chopped
- 1 tbs. dry parsley flakes
- 1-1 1/2 tsp granulated garlic
INSTRUCTIONS
- Combine all ingredients in electric pressure cooker.
- Stir.
- Seal Pressure cooker and set time for 20 minutes cook time (meat setting) with vent closed.
- Manually release steam after cooking time completed and serve.

Quick meal for busy nights. Throw it all together and set pressure cooker. Start to finish 30 minutes with only 5 miutes of prep time. Adjust seasonings to taste. We are originally from New Orleans and like well-seasoned food.
