Sweet Wasabi Tuna with Red Pepper Coulis Recipe

Previously featured at Shrine Asian Kitchen Lounge & Nightclub, recipe by Chef Kevin Long. A delicious way to prepare and serve tuna steaks.
INGREDIENTS
- ¼ cup of Wasabi
- 1 cups of regular soy sauce
- ½ cup of Mirin
- ½ cup of pineapple juice
- 1/2 cup of white miso
- 1/2 cup of sugar
- 3-4 Red Bell Peppers
- ¼ cup of Wasabi
- 1 cups of regular soy sauce
INSTRUCTIONS
- For Wasabi Glaze: Mix together first 6 ingredients. The slowly incorporate that mixture into the white miso until a glaze is formed. Adjust saltiness with sugar. The flavor should be of a sweet, salty, wasabi.
- For Red Pepper Coulis: Roast peppers until charred. Remove the skin and seeds. Reserve any liquid that comes from the peppers.
- Puree in a blender until smooth. Add the remaining ingredients and puree until all ingredients are incorporated.
- Grill your tuna to your temperature of choice. Serve with the wasabi glaze, on top of the coulis.
