Health Freak Quinoa Chocolate Chip Cookie Recipe

For those that are sensitive to Gluten, but not quite full on celiac diagnosed, here is a dessert that hits the sweet tooth without causing gastric pain.

INGREDIENTS
  • 1/2 cup Quinoa
  • 1/4 cup butter substitute (i used land o' lakes buttery spread) softened
  • 3 packets Splenda
  • 1 egg
  • 2 tablespoons sugar-free syrup
  • 4 tablespoons Almond Milk
  • 1 tablespoon vanilla extract
  • 1 tablespoon baking soda
  • 1 tablespoon corn starch
  • 1/4 cup chocolate chips
INSTRUCTIONS
  1. Take full quinoa and throw it the blender on liquify to get it to a fine, powder. Add baking soda.
  2. In a separate bowl, blend all wet ingredients (and splenda) with a wooden spoon. Vigorous. Make sure to include all parts.
  3. Pour the dry into the wet, blend the ingredients all together and add the chocolate chips while stirring. Form 3 inch patties on a lightly buttered cookie sheet.
  4. Place in preheated 350 degree oven for 12 minutes. Let them cool on metal surface. Serve ’em up!
