Breakfast Tofu Scramble with Spinach and Bell Peppers Recipe

Here’s one of Wholesome Chow‘s favorite breakfast recipes to kick-start your day into healthy, delicious fun!

INGREDIENTS
  • 1 tsp tumeric
  • 1/2 tsp black pepper
  • 1/2 tsp celtic sea salt
  • 2 tsp dried parsley flakes
  • 2 tbsp olive oil
  • 1 medium onion, small diced
  • 4 cloves garlic, minced
  • 1 each red bell pepper, large diced
  • 2 handfuls baby spinach
  • 2 lbs firm tofu, drained
  • 2 each scallions, sliced
INSTRUCTIONS
  1. Combine all spices in a dish and set aside.
  2. Heat a large skillet on high heat, add olive oil and saute onion and garlic until translucent.
  3. Add bell pepper and cook until soft. Crumble tofu into skillet and add spices, stir well to combine and heat through.
  4. Garnish with scallions and serve with salsa.
