Breakfast Tofu Scramble with Spinach and Bell Peppers Recipe
Here’s one of Wholesome Chow‘s favorite breakfast recipes to kick-start your day into healthy, delicious fun!
INGREDIENTS
- 1 tsp tumeric
- 1/2 tsp black pepper
- 1/2 tsp celtic sea salt
- 2 tsp dried parsley flakes
- 2 tbsp olive oil
- 1 medium onion, small diced
- 4 cloves garlic, minced
- 1 each red bell pepper, large diced
- 2 handfuls baby spinach
- 2 lbs firm tofu, drained
- 2 each scallions, sliced
INSTRUCTIONS
- Combine all spices in a dish and set aside.
- Heat a large skillet on high heat, add olive oil and saute onion and garlic until translucent.
- Add bell pepper and cook until soft. Crumble tofu into skillet and add spices, stir well to combine and heat through.
- Garnish with scallions and serve with salsa.
