my wife and I get about 4 servings total out of this, but there is a scramble for the last few slices.
I love eggplant, and evoo. This dish highlights the flavors of both
INGREDIENTS
- 1 eggplant
- enough evoo to coat griddle and drizzle eggplant
- sea salt and cracked pepper to taste
- chopped garlic
INSTRUCTIONS
- slice eggplant about 1 mm thick (a whole eggplant that has been frozen works well for thinner slices, of course a sharp knife is a must)
- heat griddle to about 375 degrees coat with evoo
- put eggplant on griddle dust with salt pepper and garlic (garlic may be ommited or added at the end if burning is an issue)
- cook eggplant until caramalized (golden brown) and flip.
serve immediately
- for a more rounded out veggie dish summer sqaush, zuccini, musshroom, and bell peppers can be treated the same way, and all served mixed
