Hazelnut Crusted Rack of Lamb Recipe
This is a super simple preparation of lamb, that yields very tasty results. The Hazelnuts complement and elevate the flavor of the lamb quite nicely.

- 1 rack of frenched rack of lamb (3 per person)
- 1/4 - 1/2 cup of Dijon mustard (depending on how many ribs you have to cover)
- 1/4 - 1/2 cup of chopped hazelnuts
- 1/4 - 1/2 cup of breadcrumbs (I prefer italian style because of the addition of parsley)
- 1/2 teaspoon of pepper
- 1/2 teaspoon of salt
- Preheat the oven 400 degrees.
- Then cover the rack of lamb with plain Dijon mustard then combine the other ingredients on a plate and mix together.
- Roll the rack of lamb on the plate to cover it with nuts and breadcrumbs.
- Cook in roasting tray with elevated rack for 45 minutes for medium rare and 55 minutes for medium well.
