Hazelnut Crusted Rack of Lamb Recipe

This is a super simple preparation of lamb, that yields very tasty results. The Hazelnuts complement and elevate the flavor of the lamb quite nicely.

INGREDIENTS
  • 1 rack of frenched rack of lamb (3 per person)
  • 1/4 - 1/2 cup of Dijon mustard (depending on how many ribs you have to cover)
  • 1/4 - 1/2 cup of chopped hazelnuts
  • 1/4 - 1/2 cup of breadcrumbs (I prefer italian style because of the addition of parsley)
  • 1/2 teaspoon of pepper
  • 1/2 teaspoon of salt
INSTRUCTIONS
  1. Preheat the oven 400 degrees.
  2. Then cover the rack of lamb with plain Dijon mustard then combine the other ingredients on a plate and mix together.
  3. Roll the rack of lamb on the plate to cover it with nuts and breadcrumbs.
  4. Cook in roasting tray with elevated rack for 45 minutes for medium rare and 55 minutes for medium well.
