Marvelous Masala Recipe

A tomato and onion-based dish featuring garam masala, featuring dark greens and chickpeas. Very inexpensive and rather tasty. Use vegetable stock in place of chicken stock and olive oil instead of butter to make this dish vegan. This makes a great, quick, weeknight meal and is superb leftover.

INGREDIENTS
  • 1 tsp olive oil or butter
  • 2 medium onions, slivered (mandoline is very useful here)
  • 1 tbsp grated fresh ginger
  • 1 small can tomato paste
  • 2 tbsp garam masala
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • ½ tsp ground red pepper
  • ½ tsp salt
  • 2 c. chicken or vegetable stock
  • Large can of chickpeas, drained and rinsed
  • 2 c. chopped kale or 1 ¼ c. frozen chopped spinach
INSTRUCTIONS
  1. Heat a large, heavy saucepan over medium-low heat. Add the oil, and then sweat the onions for several minutes. Add the grated ginger and stir until fragrant, about 30 seconds.
  2. When the onions are almost translucent, add the can of tomato paste. Stir continuously until the paste has darkened in color, about 4 minutes. Add the spices and salt; stir to incorporate.
  3. Slowly incorporate the stock into the tomato-onion mixture, until the mix is smooth. Add the kale, stir, and cover. Simmer for about 5 minutes, until the kale has wilted.
  4. Carefully fold in the chickpeas. Simmer for an additional 5-10 minutes. Serve with basmati rice.

  • Please get the terms right, this dish is not "garam masala."
    Garam masala is a spice mix.
    This is more like chhole.
