Crerry Squares Recipe
These cherry squares are one of my all time favorites! They are easy to make and freeze well before icing.I have not meet anyone you does not like them,so I always include them in my sweet trays.

- 1-1/4 cups flour
- 1/3 cup brown sugar
- 1/2 cup butter or margarine
- 2 eggs
- 1-1/4 cups brown sugar
- 1 tbsp. flour
- 1/2 tsp. baking powder
- 1/8 tsp. salt
- 1 cup coconut (medium-grind)
- 1/2 cup chopped walnuts
- 1/2 cup glazed or maraschino cherries
- First layer: Combine 1-1/4 cups flour with 1/3 cup packed brown sugar,cut in 1/2 cup of butter until mixture resembles coarse crumbs.Press into a ungreased 9×9-in. pan.Bake at 350 degrees F. for 15 minutes.
- Second layer:Beat eggs slightly and add the rest of the ingredients in order given.Spread over first layer.Return to oven and bake for 25 minutes until brown.
- I always use icing on these but you do not have to.I make butter cream icing and use the left over cherry juice to make a pretty pink color.
- Icing: 1 cup of icing sugar,2 tbsp. butter,1/2 teaspoon vanilla and 1 tbsp.of cherry juice or enough to make the icing spreadable.
