Blueberry Loaf Recipe
This recipe for blueberry loaf I have also made it into muffins I just sprinkle a little sugar on the top for an added crunch.The loaf is very moist and very fresh tasting even though I always use frozen blueberries.This recipe also freezes well,I have frozen both the muffins and the loaf.This recipe makes two loaves,one to enjoy now and one to freeze.

- 1 cup canola oil
- 2 cups sugar
- 4 eggs
- 1 cup milk
- 1 teaspoon vanilla
- 3 cups flour
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 2 cups floured blueberries (fresh or frozen)
- Cream the oil and sugar very well.
- Beat in the eggs one at a time;beating well after each one.
- Combine flour,baking powder and salt.
- Add the dry ingredients to the egg mixture alternately with the milk and vanilla making sure they are incorporated well after each addition.
- Stir in the floured blueberries.
- Pour into 2 greased loaf pans (9×5×3-in.).
- Bake at 350 degrees F. for 1 hour,or until golden brown.Allow to cool 10 minutes on a wire rack.Remove from pans to cool completely.
