Garlic Roasted Pork Tenderloin with Onions and Apples with apricot/pepperflake sauce Recipe

Difficulty: Easy | Total Time: 2 1/2 hrs | Makes: 6 servings

A nice big juicy garlic/parsley/rosemary seasoned pork roast.Approximate size 4-5 lbs.

INGREDIENTS
  • make a rub with a little olive oil,grated garlic cloves.crushed rosemary.
  • apples, onions, red pepper flakes and apricot preserves
INSTRUCTIONS
  1. apply the rub to the roast then sear in oven at450 for 45 mins. then reduce heat to 325 and cover while roasting
  2. Reduce heat to 325 then add wedges of onions and red delicious apples
  3. cover and roast , removing the cover for the last 45 mins only.Your roast should be crispy on top and juicy inside
  4. Remove cover for the last 45 mins. so it can brown, your roast should be crispy on top and juicy inside then brush on the glaze
