Simple Syrup Recipe
Dale DeGroff taught us this simple syrup technique, which skips the typical heating and cooling process.
Game plan: For Demerara simple syrup, just substitute Demerara sugar for white.
- 1 cup cold water
- 1 cup granulated sugar
- Place water and sugar in a container with a tightfitting lid. Shake vigorously for 3 minutes. Let rest for about 1 minute. Shake again for 30 seconds. Store, sealed, in the refrigerator.
- Alternatively, you can heat the water and sugar in a small saucepan, stirring until the sugar has dissolved. Cool completely and store, sealed, in the refrigerator.
You can boil it if you want instant dissolution of the sugar molecules...but sugar will eventually dissolve in water if left long enough...but sugar boiled and sugar not-boiled is still sugar.
Im confused. Like Bockereyer I thought simple syrup had to be boiled. Simply dissolving sugar in water wasn't enough, and over time the sugar would settle out of the water and settle to the bottom of the container. Maybe in a bar where you are possibly going through large quantities the solution would not have time to separate.
Sugar syrup is never sugar dissolved is water. Always cook for a few minutes and cool down.
Taste and you should notice the difference.
Well no, but I needed the ratio of sugar to water...
Really?!? Really?!? Does anyone who would even come to the site REALLY need to know how to dissolve sugar in water?
