Hearty chile rellenos casserole Recipe

I needed to take a dish to a pot luck, a main dish that had great presentation, would be appealing to various cultures attending, look expensive,but would not actually cost me a lot of money. :0)

INGREDIENTS
  • 1 lb ground breakfast sausage
  • 1 lb ground beef
  • 1 lb grated sharp cheddar cheese
  • 1 diced yellow onion
  • 6 eggs, 2TBL tobasco sauce, 2TBL flour, juice from the can of green chiles, salt
  • 1/2 tsp seasoning salt
  • 1 32oz can whole green chiles, roasted & seeded
INSTRUCTIONS
  1. Line a 9×13 baking dish with whole green chiles, open them, lay them flat, go up the sides of the dish with them.
  2. Brown the sausage, hamburger, onion & seasoning salt together. Place in dish.
  3. Quickly scramble the egg mixture and pour into the dish. Bake @ 375 for 25minutes.
  4. Sprinkle cheese over the top. Bake for another 5minutes. Garnish with finely chopped lettuce, tomatoes, olives, avacado and sour cream.
