Brie with Red Wine, Thyme and Mushrooms Recipe
I always get begged for the recipe to this warm gooey brie with red wine, thyme and mushrooms. I serve it with crostini and a big glass of red wine.
You can use other mushrooms if you like, it seems guess prefer the crimini though, bold flavor with the wine, but not overpowering like shiitakes.
- 2 tablespoons unsalted butter
- 14 ounces crimini mushrooms, sliced
- 2 teaspoons thyme
- 2/3 cup dry red wine
- 14 ounce good brie, top rind removed
- baguette, sliced into 20 pieces
- olive oil
- Preheat oven to 350F. Place brie in an oven safe dish and set aside.
Rub each slice of baguette with olive oil, and bake for 8-10 min. - Melt butter in a large skillet over medium heat, add mushrooms, cook until browned, add thyme. Stir until fragrant and add wine.
- Top brie with mushroom mixture, and bake for 10-15minutes. Serve with warm crostini and spoons. Enjoy!
