Cornbread Recipe

My sister always makes this recipe for Thanksgiving. It’s ridiculously good and, knowing how much butter is in it, decadent. But so worth it.

INGREDIENTS
  • 3 cups unbleached white flour
  • 1 cup cornmeal
  • 2 Tablespoons baking powder
  • 1 1/2 teaspoons salt
  • 2 sticks unsalted butter (8oz)
  • 2/3 cup sugar
  • 2 cups buttermilk
  • 2 eggs
INSTRUCTIONS
  1. Preheat oven to 450 degrees.
  2. While oven is preheating, place butter in 9×13 casserole dish and put it in the oven to melt, making sure it doesn’t burn.
  3. Whisk flour, cornmeal, baking powder and salt in bowl
  4. Take pan of melted butter out of the oven and tip the sides to coat the whole inside of the dish with butter.
  5. Set remaining butter aside, allowing it to cool slightly.
  6. Whisk sugar, buttermilk and eggs in separate bowl while slowly pouring in butter.
  7. Add dry ingredients to wet and quickly mix until all dry ingredients are wet. Batter will be very thick. Don’t overmix.
  8. Bake for 18-30 min checking with toothpick every 5 min after the initial 18. Top should be slightly browned. Can also be made in a large cast iron skillet.
