Cornbread Recipe

My sister always makes this recipe for Thanksgiving. It’s ridiculously good and, knowing how much butter is in it, decadent. But so worth it.
INGREDIENTS
- 3 cups unbleached white flour
- 1 cup cornmeal
- 2 Tablespoons baking powder
- 1 1/2 teaspoons salt
- 2 sticks unsalted butter (8oz)
- 2/3 cup sugar
- 2 cups buttermilk
- 2 eggs
INSTRUCTIONS
- Preheat oven to 450 degrees.
- While oven is preheating, place butter in 9×13 casserole dish and put it in the oven to melt, making sure it doesn’t burn.
- Whisk flour, cornmeal, baking powder and salt in bowl
- Take pan of melted butter out of the oven and tip the sides to coat the whole inside of the dish with butter.
- Set remaining butter aside, allowing it to cool slightly.
- Whisk sugar, buttermilk and eggs in separate bowl while slowly pouring in butter.
- Add dry ingredients to wet and quickly mix until all dry ingredients are wet. Batter will be very thick. Don’t overmix.
- Bake for 18-30 min checking with toothpick every 5 min after the initial 18. Top should be slightly browned. Can also be made in a large cast iron skillet.
