Sweet and Spicy Meatloaf Recipe
This is a recipe that I came up with when my oldest child was only five, (she’s 25 now). She was a very picky eater and I was trying to find a way to make something that she would eat that I could keep around for a while. Well I found that she would eat it, but I couldn’t keep it around for very long; she loved it that much.
Since then everyone I have ever made it for has told me the same thing, they love it and wish I would make it more often. I made a triple batch last night and it’s already half gone by this afternoon and my husband and I are the only ones who have been eating it.
- 1 lb lean ground beef
- 2/3 cup of Pace Thick & Chunky Salsa (or your favorite salsa) I use mild but you can use what ever heat you like.
- 1/4 cup of honey
- 1/2 cup of bread crumbs or crushed unsalted crackers
- 1 egg (beaten)
- Mix salsa and honey together in a bowl, then separate half of the mixture into another bowl and set aside for later use.
- Mix all remaining ingredients together gently, including the first half of the salsa honey mixture. I generally use my hands to kneed the ingredients together as I have found you get a more thorough mix this way.
- Form into a loaf and place in baking dish or loaf pan. Bake at 350° for about 45 minutes.
- Top with remaining salsa honey mixture and bake for an additional 15 minutes.

Hm... must be something wrong... sometimes the egg shows up on the list sometimes it doesn't.
Ok, now that I made my comment about it not showing up, it's on the list... go figure.
I don't know why but one of the ingredients doesn't show up. There should also be 1 egg (beaten) in the ingredient list. I tried to edit this recipe but it still doesn't show up. Sorry folks.
