Zach's Mac Recipe

Easy to make Leek, Bacon, and Cheddar Mac and Cheese!

INGREDIENTS
  • 6 cups shredded sharp Cheddar cheese
  • 10-12 oz sour cream
  • 8oz Bacon, Diced
  • 1/4 cup bacon fat
  • 3 Stalks of Leeks, using only whites and light green parts. cut 1/2 through and sliced.
  • 1/2 cup grated Parmesan cheese
  • S&P TT
  • 8oz small curd cottage cheese
  • 2 cups dry breadcrumbs
INSTRUCTIONS
  1. Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil, add pasta, and cook until done; drain.
  2. Cook bacon in saute pan, draining bacon fat as necessary to get a nice crunchy bacon. reseve fat for topping, Deglaze pan with 1/8 cup water..get up all the crunchy bits on the bottom and place in 9×13 pan with bacon
  3. In 9×13 inch baking dish, stir together macaroni, shredded cheddar cheese, bacon, leeks, cottage cheese, sour cream, parmesan cheese, salt and pepper. In a small bowl, mix together bread crumbs and bacon fat. Sprinkle topping over macaroni mixture
  4. Bake 30 to 35 minutes, or until top is golden
