Holiday Bon Bon Pecan Cobbler Recipe

At our holiday gatherings, one of Mom’s pecan pies is the first dessert to go, especially since it only serves six and our family is very large. I created this decadent cobbler so that it is reminiscent of her pecan pie, serves twice as many, plus I added flavors of a traditional holiday bon bon. Delicious!

INGREDIENTS
  • 2 1/2 cups light corn syrup
  • 1 1/2 cups granulated sugar
  • 1 cup powdered sugar
  • 1/4 cup unsalted butter, melted
  • 2 teaspoons vanilla
  • 1/4 teaspoon salt
  • 5 large eggs
  • 2 1/2 cups pecan halves
  • 1 cup milk chocolate chips
  • 1 cup flaked coconut

Crust

  • 3 cups sifted all-purpose flour
  • 1/2 teaspoon salt
  • 1 1/4 cups vegetable shortening
  • 1 large egg
  • 2 teaspoons white vinegar
  • 1/4 cup cold water
INSTRUCTIONS
  1. Heat oven to 350 degrees.
  2. Spray a 13×9-inch baking dish with cooking spray. Set aside
  3. . For filling, in a large mixing bowl, beat corn syrup, sugars, butter, vanilla, salt and eggs on medium speed for 1-2 minutes until well mixed.
  4. Pour about 1/3 of mixture into prepared dish.
  5. Stir pecans, chocolate chips, and coconut into remaining mixture. Set aside.
  6. For crust, stir flour and salt together in a large bowl. Cut in shortening with pastry blender until pea-sized.
  7. In a small bowl, whisk together egg, vinegar, and water. Pour into flour mixture. Work together with a fork until a ball is formed.
  8. Roll out on lightly floured board to a 13×9-inch rectangle. Carefully place over filling in dish.
  9. Spoon remaining filling mixture onto crust.
  10. Bake for 50-60 minutes or until center is set. Cool slightly .
  11. To serve, cut into squares. Garnish as desired.
