Oat Pancakes Recipe

My daughter created this recipe for her children that are allergic to wheat, eggs and milk.

INGREDIENTS
  • 3/4 cup oat flour
  • 3/4 cup rice flour
  • 3 tablespoons sugar
  • 1/2 teaspoon cream of tartar
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon lemon juice
  • 1 cup soy milk
  • 1 tablespoon oil
INSTRUCTIONS
  1. Combine all ingredients in a bowl and stir well.
  2. Heat a frying pan on medium heat. When hot, pour batter onto frying pan by spoonfuls and heat each side for 2-3 minutes.
  3. Serve with favorite toppings
